Dal Baati Churma is a classic and delicious dish from Rajasthan, perfect for anyone who loves a variety of flavors. It's made up of three simple parts: *Dal* (spicy lentil soup), *Baati* (crispy wheat balls that are cooked and dipped in ghee) and *Churma* (sweet crumble). Together, they make a delicious balance of salty, spicy and sweet. This dish is not only delicious, but also a great way to experience traditional Rajasthani cooking. 1. **Toor Dal (Yellow Pigeon Peas)** – 1 cup
2. **Onion** – 1 medium, chopped
3. **Tomato** – 1 medium, chopped
4. **Green Chillies** – 1-2, chopped (adjust to taste)
5. **Ginger-Garlic Paste** – 1 tsp
6. **Turmeric Powder** – ½ tsp
7. **Red Chillies** – 1 tsp
8. **Garam Masala** – ½ tsp
9. **Cumin Seeds** – ½ tsp
10. **Coriander Powder** – 1 tsp
11. **Salt** – to taste
12. **Oil or Ghee** – 2 tbsp
13. **Fresh Coriander Leaves** – for garnish
Baati (Baked Bread)
1. **Wheat Flour** - 2 cups
2. **Semolina** - ¼ cup
3. **Baking Powder** - 1 tsp
4. **Ghee** - ¼ cup (plus more for serving)
5. **Salt** - to taste
6. **Water** - as needed for kneading the dough
Churma (Sweet Crumble)
1. **Wheat Flour** - 1 cup
2. **Ghee** - ¼ cup (plus more for mixing)
3. **Jaggery or Sugar** - ½ cup (grated)
4. **Cardamom Powder** - ½ tsp
5. **Chopped Nuts** (Cashews, Almonds) - 2 tbsp (optional)

Prepare the dal: Wash the toor dal thoroughly under running water. Add 3 cups of water, ½ teaspoon turmeric powder and salt to the dal. Cook for 3-4 whistles until soft. If you don’t have a pressure cooker, you can boil it in a vessel until soft. Prepare the tadka: Heat 2 tablespoons of oil or ghee in a pan over medium heat.
Add ½ teaspoon cumin seeds to the hot oil and wait until they crackle. Then, add chopped onions and cook them until they turn golden brown.
Step 2: Make the Baatiarlic paste
Add tomatoes and spices: Add chopped tomatoes, green chilies and 1 teaspoon ginger-g . Cook until the tomatoes soften. Add 1 teaspoon red chili powder, 1 teaspoon coriander powder and ½ teaspoon garam masala. Mix well. Combine with cooked dal: Add the cooked dal to the pan, mix well and simmer for 5-10 minutes. Garnish with fresh coriander leaves before serving.
Prepare the dough: In a large bowl, combine 2 cups wheat flour, ¼ cup semolina, 1 teaspoon baking powder, and salt to taste. Add ¼ cup ghee and rub it into the dough until it becomes crumbly.
Make the dough: Add water to the flour mixture slowly to make a soft dough. Place a towel over it and let it rest for 20 to 30 minutes.
Shape the Baati: Divide the dough into small balls (about golf ball size). Flatten them slightly with your hands.
Bake the Baati: Preheat your oven to 180°C (350°F). Place the Baati on a baking sheet and bake them in the oven for 20 to 25 minutes, until they turn a beautiful golden color. Alternatively, you can cook them in a tandoor or over a flame till they are well charred. Step 3: Prepare the churma
Roast the flour: Heat ¼ cup of ghee in a pan. Add 1 cup of wheat flour and roast it on low flame till it turns golden brown and aromatic. Stir continuously to avoid burning.
Add sweetener: Let the roasted flour cool down a bit, then add ½ cup of grated jaggery (or sugar) and ½ teaspoon cardamom powder to it. If you want more crunch, add some chopped nuts to the mixture.
Crumble: Crumble the mixture with your fingers till it turns into a thick, crumbly consistency.
Step 4: Serving
Plat the dish: Serve the hot baatis with a drizzle of ghee. Serve them with spicy daal and sweet churma on the side. You can also add some pickles and curd to it for a complete meal.
